    Hill and Dale Shiraz Case - 6 x 750ml

Stellenzicht's hillandale label offers a range of accessibly styled wines with a new world character for international appeal, created by award-winning winemaker Guy Webber. Grapes for the hillandale wines are selected from vineyards within the Stellenbosch region. Extensive vineyard management programmes are in place for each of the vineyards from which the fruit is selected. All aspects of the process are strictly governed so as to comply with not only the standards set for the integrated production of wine (IPW) system, but also with the quality standards set for HACCP and the BRC (British Retail Consortium). The name for the range was derived from Stellenzicht's hillandale farm, located just outside the town of Stellenbosch. The logo on the label depicts an Oak tree leaf, synonymous with the historic university town. Vineyards: The vineyards, planted between 1991 and 2005, are situated on gentle slopes facing north and north-east at altitudes of between 120m and 260m above sea level in marginal soils of decomposed granite and table mountain sandstone. The vines are all grafted onto nematode-resistant rootstocks and trellised on five-wire fence systems. No supplementary irrigations were needed during the growing season due to 2013 being one of the coolest and wettest vintages in many years. The vineyards yielded an average 6.2 tons per hector in a vintage characterised by cooler than normal conditions during the ripening period. Wine making The grapes were harvested between 28 march and 5 April 2013 at an average of 25 degrees Celsius balling. After destalking and crushing, the mash was fermented in stainless steel tanks at between 25 and 27 degrees celsius before being transferred to a combination of oak barrels and vats where the wine matured for 14 months. A total of 1 056 cases was bottled on 28 July 2014.

    Features:
    - Colour: Bright and intense ruby with a distinctive purple rim
    - Nose: Fresh and vibrant with loads of red fruit, plum and savoury spices. Oaking is not very evident while the fruit-flavours are more forthcoming
    - Taste: Medium-bodied and friendly with plummy fruit-sweetness which is perfectly balanced by some subtle spicy Oak-flavours. The lengthy aftertaste is elegant and persistent making the wine exceptionally easy to enjoy. Ageing process and potential Highly drinkable in it's youth, the wine should gain in complexity to an age of three to five years
    - Food Pairing: Enjoy on it's own or with a variety of red meat dishes, pastas and simple home-cooked stews. The wine is particularly versatile and will complement almost all red meat dishes.
